One bowl and less than 10 ingredients!!

This gluten-free, dairy-free, soy-free…. EVERYTHING free bread (except for the ingredients below) turned out so delicious I had to share. The slices are thin, so if you like larger slices of bread you can double the recipe.

And no I am not going to go into a full blog before I reveal the recipe…

Ingredients

1 cup rice flour or quinoa flour

4 eggs

1/2 cup almond meal

1/4 cup ground flaxseed

1/4 cup pumpkin seeds

1 tbsp olive oil

2 tsp apple cider vinegar

1 tsp baking soda

1/4 tsp sea salt or pink himilayan salt

Instructions

Preheat oven to 350 F. Mix all ingredients except for baking soda, apple cider vinegar, and eggs. Stir well and start whisking in 1 egg at a time. After the batter is mixed at the baking soda and apple cider vinegar. Fold it into the batter and pour into a greased bread pan. Bake for 35-45 minutes or until a toothpick comes out clear.

Let cool on a drying rack and slice. If you can eat it within a few days, put it in the refrigerator. If it will take you more than a few days to eat, I would store it in the freezer and take one slice out at a time to thaw.
