INTERVIEW WITH GRACE

How do you stay healthy with a busy schedule?

I prioritize simple, healthy habits that I know can fit into my routine even when things get busy. Sleep is my number one priority, and a consistent bedtime and wake time allows me to feel rested and ready to take on the day. I also always make time for some kind of movement or exercise during the day; whether it is a short walk or an intense strength session, I know this makes me feel my best. Lastly, I am not a dietitian if I don’t include the importance of proper fuel! Eating balanced meals with nutrient rich whole foods, and an occasional sweet treat keeps me going.

If you could eat one cuisine for the rest of your life, what would it be and why?

Mexican!! I could eat some form of a taco every single day and it never gets old. There is just something about a meal that you can eat with your hands? My favorite is a mahi mahi fish taco on corn tortillas topped with a fresh sweet salsa. Yum!

What’s your favorite healthy snack?

I love a loaded yogurt bowl topped with berries and homemade granola! I prep a big batch of homemade granola every week using a variety of nuts and seeds; it’s so much better than store-bought!

Can you share something about yourself with us we may not know?

I am 1 of 5 children, and I am the only girl! I grew up with 5 boys in the house, and I believe that has shaped me to the independent (and stubborn) woman I am today.

Do you have a favorite inspirational podcast or book?

That’s a tough one! I just finished up the book “The Midnight Library” and it was a great reminder of how precious every moment of life can be, whether good or bad. It can be so easy to live day by day without soaking in the moments and appreciating all that life can give, so this was an inspiring, but also fun, read that provided a new perspective on life.

What’s your all time favorite song to work out to?

Any kind of throwback music is my go-to. I love to be able to sing along and dance during my workouts!

Tell us how you first go interested in health and wellness.

I grew up doing gymnastics and never cared about how my nutrition impacted my performance or overall health. After retiring from my life-long sport in high school, I quickly discovered how my diet impacted every aspect of my life, including my skin, gut and sleep. I started cooking my own meals and discovering how much better I felt when I ate nourishing foods. Fast forward to college when I discovered that there was a career that allowed me to combine my interest in nutrition with my passion for helping others. My pre-medicine route quickly shifted to nutrition, and the rest is history!

What is your spirit animal and why?

Lemur! Lemurs are known for their curiosity, strong social bonds, and deep connection to the earth. I also try to take an energetic and lighthearted approach to life, which I believe aligns with their cute and playful attitudes.
