INTERVIEW WITH STEPHANIE

What are 3 ways you stay healthy with a busy schedule?

Getting restful sleep is an absolute must for me to feel my best. If I do not get 8-9 hours of sleep, I notice that my cortisol is all over the place the next day as well as my blood sugar. Also, I used to workout an hour a day…not anymore. Now I fit in 15 to 20 minutes of movement everyday whenever I can. I like yoga, pilates, strength, and HIIT. I also walk 10,000 steps a day. Last, I focus on eating whole, real, foods that are full of nutrients that give me steady energy throughout the day.

If you could only eat one cuisine for the rest of your life, what would it be and why?

I love sushi! There is nothing like fresh sushi that practically melts in your mouth. I think I love it so much because it reminds me of when I used to travel to the Pacific Northwest. I haven’t been in a long time, but it is my favorite part of the country.

What’s your favorite healthy snack?

The one snack that seems to stick with me is a good ‘ol handful of nuts like walnuts or pistachios. They seem to have the right amount of protein and fat to keep my blood sugar stable until my next meal.

Can you share something about yourself with us we may not know?

This is always a fun question. A fun fact about me is that my mom got pregnant with me with her tubes tied! My 3 siblings are much older than me, but we all wouldn’t have it any other way.

Do you have a favorite inspirational podcast or book?

Right now, I am loving The Be Well By Kelly podcast. I started following Kelly a few years ago because her philosophy about eating really resonated with me…always eat to balance your blood sugar. I have always struggled with keeping my blood sugar balanced, but I was eating the wrong things. Now, I focus on eating protein, fat, fiber, and greens at every meal, and I feel so much better. Plus, she has two little boys like me!

Tell us how you first got interested in health and wellness.

Honestly, my interest in health and wellness started at a very young age. I was anorexic at just 9 years old. After that, I became very interested in food and how it affects our body. 20 years ago, I followed the “clean eating” lifestyle, and then my passion just grew from there. I kept wanting to learn more! I am also so grateful to now know that health and wellness doesn’t just pertain to the food we eat…it is so much more. Yes, food matters (especially quality food), but now I am fascinated by how stress, sleep, exercise, the way we detox, our environment, and more affect our health and well-being. I am pretty obsessed!

What is your spirit animal and why?

Hmm…this is an interesting question. I had to look up what each animal means, but I think I identify most with a giraffe. I tend to follow my gut instincts and have pretty good inner awareness. I am also very close to my family and friends, and I like to think of myself as gentle and graceful.
